Head rebuilding isn't a DIY job. Your shopping list should be valves - Ferrea 5000 series are a good match for a street car. You'll buy springs and retainers to match your cam, get those from your cam company, or have them spec them out for you. Your machinist can supply the valve locks, shims, seals, guides and seats as needed.

My thoughts with the pistons is you can have a shop swap them over to your rods without rebalancing the engine, as long as you're within a certain weight tolerance. That way, you get rid of the 73-up dished pistons, and get a flat top with proper compression height as close to Zero Decked as possible. Ford built them .035" down in the hole. Again, this assumes you have clean bores with no ridge.
