Aside from issues resulting from old fuel and leaking top, it sounds like you still have a pretty significant vacuum leak. Check base of carb with straight edge, install new base gasket, try spraying carb cleaner at base when idling to see if idle rises (source of vacuum leak)

Each cable end should be color coded with a daub of paint (might be faded / dirty).  Ferrules at the ends slip into a notch and all are held in place with a small (but strong) spring -- don't lose the spring!  I would recommend placing fresh color code on each cable end to make re-assembly...

IMO, the 71' M code is the more interesting ride. The description appears straightforward. M-code with air would be fun ride. The extra 10K can take care of quite a few items.

New 1" foam pads with adhered cotton covers used to come with the new boot covers. Last boot covers I ordered came with 1/4" foam pieces (useless unless folded over once or twice). As it usually happens, the penny pinching accounting dept must have decided the 1" pieces were not necessary.
