    The sport steering wheel from early-80s Ford trucks are nice replacements. Be sure to get the one that uses the center button for the horn. The ones out of some Ford cars don't have the contacts since the cars used the turn signal stalk for the horn.

    Rebuild kits for FMXs are readily available. Check with some of the reputable independent mechanics in your area and see if any will take it on. The FMX are not difficult to overhaul so I'm surprised they turned you away.

    I think your approach as listed in your #3 is sound. Don't overlook the simple stuff like fluids, belts, hoses (heating/cooling and vacuum), etc. It's not uncommon for people to put the wrong style thermostat in 351Cs so you may want to check it while your working on the engine...

    Yes. I'd go with a completely evacuated system and add the correct oil charge when servicing. Don't over do it on the air pressure. EDIT: Be sure when you evacuate the system you check that it holds vacuum. I usually let it hold for 30 minutes, just to be sure.

    If your expansion valve was working before, there is no need to change it. I'd definitely replace the receiver/dryer if it's been open to the air for a while.

    Sounds like an interesting build. I'm partial to the later roller cam blocks, rather than the flat tappet cam blocks. They both are great starting points for a build. Looking forward to reading about your progress!
