How did you cut your springs? The safe way is with a cutoff wheel since it doesn't overheat the steel. Using a torch can overheat the steel and affect its strength.
Check the reviews on those interior panels. All I've read has been they do not fit well and are not made well. It might be well worth your time to try and find some nice original ones and dye them to match your interior.

You may want to check your oil pressure sending unit to make sure it's not the source of the oil leak. Your head gaskets should still be okay if they were when it was parked. For the rust, you can use a wire wheel to brush off the rust but you may want to get some Evaporust, or similar, and...

No. If you look in the part of the wiper arm that fits over what you have in the picture you will see that it has several degrees of adjustment. Try reinstalling the wiper arm in a lower position. If this doesn't place the arms low enough the park function of your wiper motor may have failed.
Since I don't build to concours standards anymore, I just go with black. A little truck bed liner to dampen stones thrown off the tires, it desired. Looks good and easy to touch up when needed.
