As mentioned above, you want your IAC to read between 2-10 when you above 160 degrees. If you're higher than that you want to close your blades more and recheck. Keep in mind that ever time you adjust your blades you have to reset by turning the car off and restart.

What does your handheld look like at idle? Pull up the vitals and do a quick vid of it at 160 degrees. 

I have a 408 with that setup but I have a mild cam. If you're running that rich you need to look for an exhaust leak.

For what it's worth, she did do the 418/437. The sheet I posted is what was emailed from the shop. Here is the sheet that came home with the car.

She pulls nicely from 2K up! Which does make for a fun street ride.

This is one hell of a restoration. Great job. If you ever change your mind on the hydraulic clutch, Malwood makes a great kit. Thats what I have on mine and it feels like my wife's jetta.
