Knitted vinyl seats were standard on '73 verts, those seats are plain vinyl

Not sure I can explain completely as I’m searching to replace mine, but what I have run into is that there are left snd right torsion rods, they have to be “wound” in place to pick up the trunk lid evenl, if only one rod, the lid is torked and will not close evenl.

You need right left torsion rods for the trunk to be flat and to work properly

Up to ‘73 the ignition runs through the tach, then back to motor, if original, might check as any short will stop the engine

Gorgeous car! I do not know for sure, but you might try Mod Podge, there's a lot of tips on the Internet about glass to fabric in craft circles, I would probably try it (I have a 73 Convertible that I just finished restoring, but the top was OK). Ever get tired of your car, please think of me!
