trade the 72 Mach for a 69 Mach????

If it were me (and I too love the 69 fastback) I would build that Windsor. Lighter, many aftermarket parts and likely less costly in the end. Remember that besides everything needed to swap out to the larger motor, there is the suspension to consider.

    Barnfind 1971 Mach 1

A couple of things that stick out to me as evidence of many more miles: 1) looks like the typical buildup of grime over the sticker on the front of the valve cover 2) paint missing from the horn from miles of wind and rain pelting it.

Car dies after driving about 1/2 hour

Don't forget the small hose that connects the main fuel line to the piece that runs parallel to the inner fender, located near the brake combination valve. Maybe it is collapsing in on itself or the inner lining is breaking down, blocking fuel.

    Grant GT Steering Wheel

Had that problem once too. I can't remember what modifications I had to make but I do recall using some fiber gaskets to insulate the three bolts from the contact plate. Somehow they were completing the circuit.

    SPINNING ROCKER NUT

Can you pull up on the rocker as you turn the nut? That might help you walk it off.
