I've noticed under the hood that there are some type of holder on the windshield washer hose and hood light wire, to name a couple.

Appears to be some type of plastic ( ~1" ) that has 2 prongs on the end which then stick into the matching hole in the metal. Over the years, looks like the plastic has aged and one of the prongs has broken off and I'd like to replace some to keep wire / hoses in place.

Are these anything special or can I find them at a general hardware / automotive store in the fastener section?

Pretty much any vintage mustang supplier has these.
