I believe it would be the 7 quarts. I do always fill my oil filter prior to installing on the car though. I believe your dip stick should still give you an accurate reading as the depth and width of the pan is increased over the stock but the top level of the oil should remain the same. Keep in mind the Boss 351's were issued a different dip stick to show that it takes an additional quart over the stock stick with the same pan.

 
The level on the dipstick will remain the same, regardless of the pan used. A wider "T" style pan will allow more oil to be used while maintaining the exact same "OIL LEVEL."

Stock pan- 8 1/4" deep

Moroso pan- 8" deep

Milodon pan- 9 1/2" deep

Canton Pan- 8" deep

With your Canton pan you will use atleast 6 qts (including the filter amount) Fill with 6, run it, then check the dipstick. You could run that pan or any of the pans a quart low and it will not run the sump dry. (unless you race it) It is better to not overfill your pan.
