what oil viscosity is recommended for our engines? I,m currently using 10w40. Should I go heavier to 20w50 or even go single grade?

10 - 40 should be fine for area / temps

10w-40 or 10w-30 is fine. 5w-10 or 20 can sometimes show up as more engine oil leaks, or the engine seeming to burn up the oil.

I use Castrol GTX 10w40 High Mileage. The "High Mileage" supposedly contains additives more suitable for older engines.

Use an oil with a high zinc content, like Valvoline VR-1 or others designed for flat tappet cam engines. I would use 20w50 if your oil pressure was low, if not 10w30 or 10w40 would be fine
