I would do the following:

1. Pour water into the cowl area and see if it leaks inside the car.

2. Get a thin fridge magnet and test for bondo in the common areas (trunk drop offs, bottom of the quarters, tail light panel, rockers, etc..). I would do the whole car if you have time and the seller doesn't mind.

3. Check to see if the door buzzer comes on, if the gauges light up... figuring out electrical issues can be a pain in the ass when working on a previously restored car with a "custom" interior.

I'm sure there's more... but those are 3 that I can think off of the top of my head that I would make a point to check on that car...
