I have my 71 with a 302 2V 2 barrel carb.  

What is the stock carb?

What would be a good replacement?

Can I go with an electric choke?

Can I get a rebuilt stock replacement?

Stock carb is an Autolite 2100D, from the factory they have a metal tag under one of the bowl screws. If that's missing, there's a stamped part # in the vertical side of the baseplate by the forward left stud hole. Post the # here and I can tell you if you have the correct carb, or what it came off of.

Factory choke is hot air with a vacuum assist. Hot air comes from the two small pipes routed to the P/S exhaust manifold. IIRC all you need to do to swap to an electric choke is use the later style electric choke cap and plug off the hot air holes.

Rebuild kits are under $20 and the 2100 is as simple as carburetors come, which makes it a great candidate for a first time rebuilder. If you need a stock rebuild, one can be had from Rock Auto for under $200

 
where does electric choke power come from? I will probably want to upgrade to that at some point.

 
from about March 1972 ford went to an electric choke on Mustangs. The wiring diagram shows the electrical connection going to the Stator of the alternator when using the Ford OEM electric choke. If you are considering a 4V carb conversion be aware that CFM ratings for for 2V and 4V are not measured in the same way. 2Vs are measured using 3.0 in/hg and 4Vs are measured at 1.5 in/hg. Chuck

 
I don't want to over carb, so I will stick with the stock 2 barrel for now. If I ever rebuild it or upgrade to heads that breath I will match that with the proper carb. No need to put a 4 barrel on 2V heads, that will just waste gas.

 
It does not waste gas. The 2v Cleveland heads flow better than most small block Chevy heads. A decent dual plane intake and a 600 - 625 CFM 4 bbl carb will wake up that engine nicely. Pair with some headers and it is an even better upgrade. I am running 2v Aussie heads with a 750 CFM carb, all be it I am also running a pretty radical cam as well.

 
+1 on it not wasting gas (as long as you don't over-exercise your right foot).

The primary venturies and throttle plates will be smaller than on your 2-barrel carburetor. Which means improved throttle response and improved mileage.

My low performance 302 has a 2100 carb with 1.08 inch venturies flowing 287 cfm. I have a 2100 with 1.21 inch venturies flowing 351 cfm that needs a rebuild. Is going to the larger carb going to make a seat-of-the-pants difference? It's about a 22% difference.
 
About your car "wasting gas", I was getting lunch one afternoon in the local Jack-In-The-Box drive thru,.............the guy working the window leaned out to check out my Mach, and said "Wow, you don't see these cars any more, I bet it wastes a lot of gas....", and handed me my food, to which I replied, " Nope, surprisingly it burns every drop ..........." and just drove away.
