Good looking car. It will make a great project. May I recommend you get her driving and determine what is absolutely necessary for starters.
As for the question on the fuel tank and vent. The vent has a foam filler which keeps raw fuel from running from the tank to the vent can under the hood.

Also, know who machines and rebuilds the engine for you. Do not exchange it and loose the original engine. Same goes for the transmission.
I have a friend I have known for 34 years who was machining my engines while in high school, and still does today. He did my current 351 machine work and I assemble them myself. Actually this guy taught me a lot about rebuilding engines while I was in high school.
Now my little helper goes to the machine shop with me and helps clean and rework parts.
Last but not least; my FMX was rebuilt by another local guy who has a great reputation with the local race crowd.
